Easy Christmas Dinner Recipes

Christmas Baked Ham Recipe

Ingredients:
  • 1 ham (4- to 5-pound) cooked, skinned and trimmed of fat
  • 1 onion medium, sliced
  • 3 tbsp parsley fresh sprigs
  • 1 carrot large, sliced
  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • 1 bay leaf
  • 4 oz madeira wine
  • 1/3 cup powdered sugar
  • 1 1/2 cup beef broth, canned
  • 1/4 tsp thyme dried
Directions:
  • Preheat oven to 350°.
  • In a saucepan, sauté the vegetables until golden brown.
  • Place ham over vegetables with fat side up.
  • Add wine and broth.
  • Bring to simmer on stove-top.
  • Cover and place roaster or casserole in middle of preheated oven.
  • Regulate heat in such a way that the liquid simmers for 1.5 hours.
  • Frequently baste with juices in pan.
  • Take out from oven and sprinkle powdered sugar over the ham.
  • Once again, keep it in oven.
  • Bake it until golden brown. Cool and refrigerate.
  • When cool, slice thinly and arrange on a dish for serving.
  • Serve at room temperature.
Christmas Cookies

Ingredients (Cookies):
  • 1 egg
  • 3/4 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1 tbsp lemon peel, finely grated
  • 2 1/4 cup all-purpose flour, unsifted
  • 1/4 tsp salt
  • 1 1/2 tbsp water
Ingredients (Icing):
  • 3 egg whites
  • 3 1/2 cup powdered sugar
  • 2 tsp water
Directions (Cookies):
  • In a small bowl, beat together butter and sugar until light and fluffy. Beat in egg, vanilla, lemon peel and salt. Slowly, beat in flour until thoroughly done.
  • Add a few drops of water until dough starts to come away from the sides of the bowl. 
  • Next, wrap dough in a plastic wrap. Refrigerate until firm.
  • Preheat oven up to 350 degrees and grease four cookie sheets.
  • On a floured surface, roll out dough to 1/8" thickness.
  • Using cookie cutters, cut out various cookie shapes.
  • Bake for 12 to 15 minutes or until brown around edges.
  • Remove cookies to wire rack and set to cool before decorating.
Directions (Icing):
  • Beat egg whites in small bowl until foamy. Slowly beat in the powdered sugar until thick and creamy.
  • Add just enough water to acquire a good spreading consistency.
  • Spread evenly over cookies. Decorate with sprinkles, cherries, glitters, if desire.
Christmas Carrot Pudding

Ingredients:
  • 2 eggs
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 tsp soda
  • 1 tsp cinnamon
  • 1/3 cup butter
  • 1 tsp nutmeg
  • 1 cup grated raw carrot
  • 1 1/2 cup flour
  • 1 tsp salt
  • 1 cup grated raw potato
  • 1 cup walnuts
  • 1 cup dates or raisins
Brandy Sauce
  • 1/2 cup butter
  • 4 tbsp brandy
  • 1 cup sugar
  • 6 tbsp sweet cream
Directions:
  • Mix all the ingredients together in a large bowl.
  • Cover the bowl tightly with foil.
  • Bake at 325 degrees for 2 to 3 hours.
  • For brandy sauce, mix sugar and butter together.
  • Add sweet cream and heat gently
  • Stir constantly.
  • Then, add brandy.
  • Serve carrot pudding with brandy sauce.
