Roasted Whole Sweet Potatoes With Maple Ginger Topping

- 4 medium sweet potatoes, (scrubbed clean)
- 1/2 cup sour cream (light or regular)
- 1/4 tsp cinnamon
- 1/4 tsp salt, to taste
- 4 tsp butter or margarine, to taste (optional)
- 2 tbsp real maple syrup
- 1/4 cup chopped pecans, toasted
- 4 tsp brown sugar or cinnamon sugar, garnish (optional)
Method
- Pierce the potatoes using a fork
- Put it on a baking tray which is foiled.
- Bake in a preheated oven at 375 F for 1 hour or until potatoes are very tender.
- Meanwhile, mix the sour cream, syrup, salt,& cinnamon together
- When potatoes are ready, cut into slices, fluff the middles with a fork a bit, and top with a pat of butter, a dollop of the topping, a sprinkling of the nuts
- Sprinkle a little brown sugar on the top.

- 1 1/2 lbs baby carrots, peeled
- 1 1/2 lbs beets, peeled and cut into wedges
- 1 1/2 lbs parsnips , peeled and cut into 2-inch chunks
- 4 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 lb shiitake mushroom or cremini mushroom (cleaned and stemmed)
- 4 tbsp brown sugar
Method
1. Heat oven to 450°F
2. Place the vegetables in two small roasting pans.
3. Whisk together the brown sugar, oil, and vinegar together in a bowl.
4. Pour it onto the vegetables and toss it well so that the whole of the vegetables are well coated in the mixture. Cook it till becomes tender.
5. Add the mushrooms during the last 10 minutes, toss to coat well, and finish roasting.
6. Season to taste with salt and freshly ground pepper.
